Hi there! Firstly thankyou so much for having me! Live Pure & Fit was born to inspire women and men to take care of their body, love wholesome natural food and think healthy thoughts. My ultimate goal is to create a place to motivate and inspire each other to chase our dreams!
When did you start your fitness & healthy living journey?
A few years ago I became very sick, lethargic and nutritionally my body was low in all sorts of vitamins and minerals. This was caused by various intolerances and allergies and I constantly lacked energy and felt very uncomfortable after meals. I decided that life was too short to waste feeling this way, so I started my journey to a healthier version of me. Instead of ignoring my allergies, I learnt to respect them and cook dishes that eliminated Gluten and Dairy. In return my body started to become refreshed and revitalised and I found a new love for converting traditional dishes into healthier and more nutritious versions to suit my and many other lifestyles.
Whats you're favourite type of workout?
I love High Intensity Interval Training because it is quick and you can achieve more results in less time! I also love getting outdoors and going for rainforest walks or climbing mountains with friends, this is the type of exercise I love to do! I don’t find it a chore... unlike say....steady state cardio! Hehe.
How do you stay motivated?
Honestly social media is a huge motivator for me! I follow so many health and fitness accounts on Instagram so when I wake up each day all I have to do is scroll through my news feed and I become instantly inspired! My followers also motivate me to achieve my goals and dreams with their positive feedback and lovely comments.
Whats your favourite recipe?
My favourite recipe would have to be my Un’beet’able Cupcakes recipe which is featured below and also in my new eBook Sweet Nothings available on my website. These cupcakes taste so rich and delicious you will swear they are naughty, but I promise you they are completely healthy! Also don’t worry.. you can’t even taste the beetroot!
Un’beet’able Cupcakes
Vegan • Gluten Free • Dairy Free • No Added Sugar
Ingredients
225g canned beetroot, drained and rinsed well
1⁄3 cup coconut oil
1 1⁄4 cup mixed berries
2 tsp vanilla extract
1 1⁄4 cup quinoa flour
1 1⁄2 tbsp cacao powder
1⁄4 tsp salt
1 1⁄2 tsp baking powder
1 cup unsweetened almond milk
coconut yoghurt for frosting
Method
Preheat oven to 180C/360F.
Mix the beetroot, mixed berries, almond milk, vanilla and coconut oil in a food processor until smooth.
In a bowl, sift together the quinoa flour, cacao, salt and baking powder.
Slowly add the wet mixture into the dry mixture and fold through in batches until the mixture is fully incorporated.
Divide among cupcake liners, filling them 3/4 full, and bake for 25-30 minutes until a skewer inserted into the centre comes out clean.
Frost the cooled cupcakes with natural coconut yoghurt and garnish with berries and cacao nibs.
Store cupcakes in refrigerator.
What kind of music do you listen to when exercising?
Lately I am loving Marianas Trench! Go listen to the song ‘Stutter’ and I bet that you will be moving your body within seconds! So good!
Secret indulgence?
My favourite secret indulgence is CoYo Coconut Milk Icreceam. Every flavour is delicious! Give me a spoon and a tub and I am a happy girl!
Who is your biggest inspiration?
To be completely honest with you my biggest inspiration are my family. They provide me with the guidance and motivation I need to reach for the stars and dream big. If I am ever doubting myself or thinking negatively, my family provide me with a positive path to follow and each and every day I am so grateful I have their support.
Whats your fav purchase been from BB?
Ohhh goodness I have purchased a heap from BB in the past... but lately my favourite is the Roadside jumper I am wearing in the attached photos! I love how it can be paired with ripped denim shorts and cons for a day look or skinny jeans and boots for a nightime look. In love!
Where do you see yourself in 5 years?
Hopefully in 5 years I will own my own organic wholefood shop/cafe that is decorated with vintage treasures, the walls will be covered with local art, local musicians will sing live to my valued guests on the weekend and cooking classes will be a regular occurrence. My vision is to have a creative space where people can go to relax, unwind, smile, revitalise with healthy nutritious food and be inspired.
