Salted caramel cookies (vegan)

A great snack to take to school, work, uni or even to nibble on at home! The
sweetness of the ‘caramel’ is perfectly balanced by the salt, creating a to-die-for
healthy treat. Sugar-free, dairy-free and gluten-free!

Makes about 12

Preparation time: 20 minutes



½ cup buckwheat flour

¾ cup almond meal

1 tbsp macadamia butter (or other nut butter)

1 tbsp coconut nectar (or pure maple syrup or honey)

1½ tbsp coconut oil, melted

1 tbsp mesquite (optional)

½tsp baking powder

½tsp salt

Sprinkle of cinnamon (optional)

80g Loving Earth ‘Salted Caramel Chocolate’, melted (available from health food
stores)

20g Loving Earth ‘Salted Caramel Chocolate’, roughly chopped

1-2 tbsp almond milk or coconut milk




1. Preheat the oven to 170 degrees celcius, fan-forced.

2. In a small bowl, place all the ingredients. Stir until well combined.

3. Roll into tablespoons and flatten onto a tray lined with baking paper.

4. Bake for 10-12 minutes or until just golden and still quite soft. 

Cook for a
few minutes longer for a crunchier texture.
