It’s rich, delicious and absolutely DECADENT. This salted caramel tart will banish those sugar cravings guaranteed! Also a great one to serve to guests.
Base
1 1⁄2 cups almond meal
2 tbsp pure maple syrup
1 tsp chia seeds
1 tsp vanilla
2 1⁄2 tbsp. coconut oil, melted
Filling
1 cup cashews, soaked for a few hours
1 ½ tbsp. tahini
1 cup fresh medjool dates
2 tbsp coconut oil, melted
3 tbsp pure maple syrup
½ tsp salt
A few tbsp of water (if required)
1 tsp cacao (optional)
1. Preheat the oven to 170 degrees celsius.
2. Combine all base ingredients in a bowl
3. Line a small- medium rectangular tin with baking paper. Press the mixture into the tin. Place in the oven for at least 15 minutes or until golden
4. To make the caramel, blend all ingredients in a high-speed blender for a few minutes or until creamy. If the mixture is too thick, slowly add some water. If a chocolate top layer is desired, mix one tablespoon of the filling mixture with the cacao. Spread the filling on top of the cooled base and place in the freezer.
